    Ingredients
    1 packet Just In Time Gourmet® Tortilla Soup Mix
    1 (14.5-ounce) can diced tomatoes, undrained
    5 cups water
    1/2 cup crushed tortilla chips
    2 tablespoons chopped fresh cilantro
    1 avocado, peeled, pitted, and cut into cubes
    Directions
    • Combine soup mix, tomatoes, and water in a 4-quart pot or Dutch oven. Bring to a boil, reduce heat and simmer 20 - 30 minutes.
    • Spoon soup into serving bowls and top each with crushed tortilla chips, cilantro and avocado.
