    A grill press is a flat weight used to cook food evenly on a grill, griddle, or other flat cooking surface. They are usually made of heat-resistant materials including aluminum and ceramic. Some grill presses also have raised ridges on the bottom to leave grill marks and other designs on the food. Grill presses are easy to use, but there are some tips to help you get the most out of them.

    Season Your Grill Press
    Some grill presses come pre-seasoned, meaning they have been treated with oil to have a non-stick surface. However, if your press is not seasoned, you will need to season it before (and after) each use. To season your press, preheat your oven to 325 degrees Fahrenheit and place a cookie sheet on the lower rack. Apply a thin layer of vegetable shortening or cooking oil to the bottom of the grill press – avoid getting oil on the handle. Sit the grill press, bottom down, on the middle rack of the oven and let it “bake” for one hour. Once you have seasoned your press, sit it on a heat-safe surface to cool and store it in a dry, dust-free place until you are ready to use it.

    Pre-Heat Your Grill Press
    Grill presses work by holding food flat against the cooking surface, but also by cooking both sides of the food at once. If you are cooking items on the grill, preheat the grill and put the grill press inside to heat up as the grill reaches temperature. If you are using a griddle or a skillet, but the grill press on the surface as it heats up. Once the grill press is hot enough, remove it from the heat and set it aside on a heat-proof surface. If the handle is hot, use a potholder to remove the grill press. Do not attempt to hold it with your hand always use caution to prevent  serious
    burns.
    Aluminum has the benefit it cools down right after using it to prevent burn yourself when still hot, also cleans easier.
    Cooking with Your Grill Press
    Place the food you wish to cook onto the preheated cook surface. Make sure the item in question is flat or wide enough to hold the grill press flat. For example, if you are grilling zucchini halves, put several halves together in a row so that the grill press will rest evenly on top. Spray the bottom of the heated grill press with cooking spray and place it on top of the food. Let the grill press sit until your food has cooked to the desired doneness. You might need to lift the press to check the firmness of the food, or use a food thermometer to get the internal temperature. Once the food has cooked, set the press aside to cool.
    Clean and Season Your Press
    Clean the surface of your grill press with a damp paper towel or dish cloth. If there is any food residue on the press, clean the surface with steel wool and a mild dish soap. Rinse the press and dry it thoroughly with a dish towel. Once the grill press is dry, season it again using the instructions above. Seasoning the press after each use allows a layer of laminated oil to build up on the surface, making the press more non-stick with each use.
    Things to Remember
    If you don’t have a grill press, you can use a
    cast iron skillet
    instead. Simply heat the skillet in the grill, on the surface of the griddle, or on a burner on the stove; spray the bottom with cooking spray and place the heated skillet on top of the food as it cooks.
    Because grill presses cook the food on both sides, the food will reach doneness much faster. Pay close attention to your food as you cook.
